Autumn has well and truly set in and the same goes for getting cosy and eating comforting food. Bye-bye cold salads, hello unctuous one pot wonders and earthy, warming snacking, like this new, hot, fried black bean dip created by Carlos.
In case you’re wondering, sobrasada is a Balearic island delicacy with a softer texture to its better-known counterpart, chorizo (which you can also use instead of sobrasada). Like all good things, this dip takes time. You’ll need to soak your black beans overnight – but you could also use tinned ones (we won’t tell anyone!). Let us know what you think.
Ingredients
This recipe makes about 850g of beans, or a 20cm diameter sharing bowl.
For the fried beans.
• 230g black beans, if you can find Mexican black beans, it’s ideal.
• Water, enough to soak the beans and 700g water to cook the beans.
• 1 piece avocado leaf – but bay leaf is fine too.
• 1 medium brown onion. One full half, and the other half finely sliced
• 2 garlic cloves. One whole and and the other minced.
• 1 morita dried chilli flakes, or whole dried morita chilli, deseeded, destemmed and chopped. If you can’t find it, use chipotle in adobo, or chipotle paste. If you can’t find any of them, use any finely diced fresh chilli.
• 20g rapeseed oil or butter or lard.
• A pinch / sea salt to taste.
To serve:
•700g fried beans
•120g sobrasada. If you can’t find it, use cooking chorizo and chop it up
•50g natural yogurt
•40g of fresh feta cheese
•A bag of Blanco Niño Grain blue tortilla chips
Method
For the fried beans:
•Soak the beans in water overnight.
•Cook the soaked beans in a pot with 700g of water, the avocado leaf, half onion and the garlic clove at low heat. It should take around 40 minutes. Discard the aromatics (onion, garlic and leaf) at the end.
•Heat up the oil and butter in a pot, add the diced onion, minced garlic, crushed morita and a pinch of salt and cook on low for about 10 minutes.
•Turn the heat up and once the pot is hot, add the beans and water and heat up the mix. Once it’s boiling, bring heat down to a simmer and blend with a hand blender.
•Take off the heat and season with salt.
For the sobrasada:
•In a pan, add the sobrasada or chorizo and cook it at medium heat. It will sound and smell cooked when it’s ready.
To serve:
Pour the fried beans on a wide bowl. Top it up with the sobrasada scattered over the beans. Finish with a drizzle of yogurt and sprinkle the cheese over it. Serve with a bowl of tortilla chips
