Let’s cook some healthy tacos

Taco’s aren’t just delicious…they’re also nutritious.

Our authentic corn tortillas are low in salt, and fat. Not only that, they’re certified gluten free so are suitable for coeliacs. They’re also vegetarian and vegans. Win, win win.

As we move into the summer months, it’s the perfect time to get excited about healthy tacos. So here’s a couple of recipes for you…

Zesty prawn ceviche summer tacos

Ingredients

Method

Juice and zest the lemon and lime into a bowl. Chop the shrimp into 1⁄2 inch pieces. Toss the shrimp and citrus mix. Let sit for 15-20 minutes before seasoning generously with salt and pepper. Slice the cabbage, avocado, radish, chilli and coriander. Warm the tortillas in a dry frying pan for 30 seconds on each side. Assemble your tacos – layer up your ingredients and enjoy!

Vegan jackfruit tacos

Jackfruit is a great healthy alternative to pulled pork and can now be found on supermarket shelves

Method

Drain the jackfruit and rinse with water. Shred the jackfruit with your fingers or two forks. Combine all pulled jackfruit ingredients in a baking dish and cook in the oven at 180 degrees for 30 minutes or until tender. Warm the tortillas in a dry frying pan for 30 seconds on each side. Now, top your warm tacos with pulled jackfruit, sweetcorn and a squeeze of lime. You can get creative and add more toppings such as avocado or coriander.
