These humble little tortilla chips will take your taste buds from the beaches of the Yucatan to the hills of Central Mexico. We’ve partnered with sustainable Mexican farmers to bring the best quality ingredients to create three truly unique flavours.

MADE THE AZTEC WAY


COOK

We select the very best non-GMO corn which we cook and steep overnight in limewater.

GRIND

We grind this into a dough called masa using our hand carved Mexican volcanic stone

BAKE

We take this masa and shape it into circles before baking into beautiful tortillas.

HAND CUT

We cut these into triangles, lightly fry and season to create authentic tortilla chips.

Milpa Alta

Amaranth is an ancient grain so nutritious that it was a much-revered staple of the Aztec diet for thousands of years. We now harvest our amaranth from Milpa Alta (meaning high cornfield) that overlooks the old capital of the Aztec empire. A pretty fitting homage to the community and traditions that inspired our tortilleria.

The basis of our Ancient Grain recipe is blue corn – a rarer variety indigenous to Mexico. Not only does its colour make a prettier chip – but it’s subtly sweet flavour works nicely with the earthiness of amaranth.

Celestún

There are few places in the Yucatan quite as beautiful as Celestún – a wetland that attracts thousands of flamingos to migrate to its mangroves every winter.

It’s also home to natural salt flats and is harvested using nothing but sun, rain and a few hand-pulled carts. Just as the Mayans did.

Puebla

Puebla is the home to some of Mexico’s richest culinary heritage. Including the best Ancho chillies.

Fresh, these chillies have the name of Poblano but when sun dried, they transform and intensify in flavour and take the name of Ancho.

With a sweet, smokey and dried fruit flavour these chillies we’ve complimented them with zesty lime juice to really pack a punch.
